01 - Slice the pressed tofu into 8 thin, even pieces for optimal marinating and cooking.
02 - Whisk together soy sauce, olive oil, maple syrup, smoked paprika, liquid smoke, garlic powder, onion powder, and black pepper in a shallow dish until fully combined.
03 - Place tofu slices in the marinade, turning to coat all surfaces. Let marinate for at least 15 minutes, turning once halfway through for even absorption.
04 - Heat a nonstick skillet or grill pan over medium heat. Cook tofu slices for 3–4 minutes per side until golden brown and slightly crispy on the edges.
05 - Toast bread slices until golden and crisp. Spread vegan mayonnaise on one side of each slice if desired.
06 - Layer ingredients on each sandwich base: lettuce leaves, tomato slices, cooked smoky tofu, and red onion if using. Top with remaining bread slices.
