01 - Place the chicken breasts in the bottom of a slow cooker.
02 - In a medium bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, honey, garlic, ginger, and sesame oil.
03 - Pour the sauce evenly over the chicken.
04 - Cover and cook on low for 4-5 hours, or until chicken is tender and cooked through.
05 - Remove the chicken and shred with two forks or slice as desired.
06 - Return the chicken to the slow cooker and mix with the sauce. Serve hot, garnished with green onions, sesame seeds, and cilantro.
