# Step-by-Step Instructions:

01 - Preheat the oven to 350°F. Line a 9-inch springform pan with parchment paper.
02 - In a mixing bowl, beat eggs and sugar until pale and fluffy (about 5 minutes). Add vanilla and salt. Gently fold in flour until just combined. Pour into the pan and bake 12–15 minutes, until golden and springy. Cool completely in the pan.
03 - Soften gelatin in cold water for 5 minutes. Puree mango with sugar and lime juice until smooth. Gently heat the puree in a saucepan (do not boil), then stir in gelatin until dissolved. Cool to room temperature. Whip cream to medium peaks; fold gently into cooled mango mixture.
04 - Spread mango mousse over cooled sponge base. Refrigerate 30 minutes to set.
05 - Soften gelatin in cold water for 5 minutes. Puree raspberries with sugar and lemon juice; strain to remove seeds. Gently heat puree, stir in gelatin until dissolved, and cool. Whip cream to medium peaks; fold into cooled raspberry mixture.
06 - Gently spread raspberry mousse over set mango layer. Refrigerate at least 3 hours, or until fully set.
07 - Carefully release cake from the pan. Decorate with fresh mango slices, raspberries, and mint leaves before serving.

# Tips from hearthlykitchen:

01 -
  • The contrast between tangy raspberry and sweet mango creates pure dessert magic
  • It looks incredibly impressive but actually comes together with manageable steps
02 -
  • Each layer must set completely before adding the next or they will blur together
  • Room temperature fruit purees incorporate into whipped cream much more smoothly than cold ones
03 -
  • Run a thin knife around the edge of the pan before releasing to prevent any sticking
  • Make sure your gelatin is completely dissolved before mixing with the cream
